According to the Int. Fire Code, do you need a hood for a conveyor oven?
I'm looking to undo a quick take out restuarant and the only cooking equipment I would need is a ungenerous conveyor oven. Do I need an overhead hood for it? Does it depend on the volume? At what point does a toaster become an oven in need of a hood?
